The producers we work with
We work exclusively with producers from the Jerez region, in the heart of Andalusia. These houses master the solera aging system — this arrangement of stacked barrels that allows progressive maturation — and respect the strict specifications of protected designations of origin. Among them, you will find certified DOP Jerez vinegars, creams made with green olives, and complex varieties enriched with Pedro Ximénez. Each bottle tells a story of terroir and patience.
How to choose your vinegar or balsamic cream
The DOP Jerez vinegar is the classic choice: measured acidity (around 6%), woody depth, ideal for vinaigrettes and raw vegetables. Balsamic creams offer a smooth texture and balanced sweetness — perfect for finishing a dish or pairing with cheeses. Varieties with Pedro Ximénez (an Andalusian dried grape) bring caramelized notes and work well with desserts, reduced sauces or fusion cooking.
