Paella food colouring
Food coloring for paella is the ingredient that gives your rice that characteristic golden yellow hue. Not to be confused with saffron: both add color, but their culinary function differs. This guide explains when to use one or the other, trusted brands, and how to dose for a successful paella.
Food coloring vs saffron: the real difference
Many enthusiasts confuse the two. Here's the distinction:

Real Spanish practice: in 80% of Spanish households that prepare paella daily, food coloring is used. Saffron is reserved for special occasions or Sunday Valencian paella. The two can even be combined — coloring for stable hue, pinch of saffron for aroma.

How to dose food coloring for a successful paella
Paella for 4 people (38 cm pan, 400 g rice)
Use 1 level teaspoon (about 3 g) of Carmencita coloring. Dissolve in the cooking broth, not directly on dry rice, for uniform coloring.
Paella for 6 people (46 cm pan, 600 g rice)
1 to 1.5 teaspoons (4-5 g) of coloring. Add when you incorporate the rice and broth — not before, or the color may fade while you prepare the sofrito.
Giant paella 12 people (70 cm pan)
1 entire sachet of 8 g or 2 to 3 teaspoons. Stir the broth well before adding the rice to ensure even distribution.
Common mistakes to avoid
- Adding coloring too early. If you mix it into the sofrito or vegetables, it will dilute and lose intensity. Add it after the broth, when incorporating the rice.
- Visual overdose. Beyond 1 teaspoon per 400 g of rice, the color turns artificial yellow-orange. Be moderate.
- Confusing coloring and saffron. They don't substitute for each other: if a recipe calls for saffron and you use coloring, you lose the aromatic bouquet. The reverse is less problematic (paler color).
- Storing in light. Coloring in transparent jars deteriorates under direct light. Keep in the cupboard.
