The DOP also certifies that no synthetic colorants have been added.

Mild, semi-hot, and hot pimentón — when to use which?
The mild (dulce) suits dishes where you seek color and smoky aroma without heat: eggs, fish, sweet sauces. The semi-hot (agridulce) is the balance: chorizo, stews, soups. The hot (picante) for heat lovers and robust dishes. Smoked pimentón de la Vera remains mild even at 'hot' intensity — it's the fire of wood, not raw pepper.

How long do these spices keep once opened?
Saffron filaments retain their power for 3–4 years in an airtight container, away from light.
