Seafood Conserves: the Spanish and Portuguese heritage at your table

Iberian seafood conserves embody a centuries-old craft: capturing the essence of the ocean in the jar. At Orígenes, we distribute in Switzerland houses renowned for their rigour, from the choice of raw materials to the artisanal canning. These conserves are not stopgap products — they are gastronomic ingredients, conceived for the refined aperitivo, the quick table that does honour, or the tapas that tell a story.

The houses we distribute

Espinaler, a Catalan institution from Vilassar de Mar (Barcelona) founded in 1896, is the benchmark of the Spanish aperitivo: mussels, cockles, tuna belly and genuine preparations in oil or sauce. We select each house above all for the quality of the raw product.

How to choose

The tuna belly (ventrèche): the abdominal muscle of the tuna, fleshy and unctuous, ideal diced for the aperitivo or on a simple plate. The sardine: a classic, economical, perfect for tartines or the Andalusian plate. The mussels and zamburiñas (small scallops): whole shellfish, delicate texture, to be reserved for pure tastings or risottos. The puntillitas: tiny cuttlefish, crispy, surprising as an aperitivo.
Start with the Espinaler classics to explore the Catalan aperitivo. One tin opens two paths: the immediate aperitivo (toasted bread, lemon) or the cooking ingredient (salad, pasta, risotto).

Frequently asked questions

What is the difference between an artisanal conserve and an industrial tin?
Artisanal conserves select the raw material day by day, sometimes deveined by hand (tuna belly, anchovies). The recipes remain simple: oil, salt, possibly tomato or a light sauce. Industrial ones aim for stability and economy, often with additives. You taste the difference from the very first bite.

Tuna belly, sardine, zamburiña: how do I know which I prefer?
Tuna belly is fleshy and rich, for the aperitivo or a dish. The sardine is classic, fine, economical. Zamburiñas are delicate, for those who enjoy the texture of small shellfish. Start with a light variety (sardine), then build up in intensity (tuna belly). The puntillitas are for the curious.

How do I enjoy a seafood conserve?
As an aperitivo: pour over toasted bread, fresh lemon, flaky salt. In cooking: use the oil from the tin as a base for sauce, the contents as a rich ingredient for salad, pasta, risotto, eggs. Storage: sealed, several years; opened, 3–4 days refrigerated.
