This philosophy — discreet quality, affirmed ethics, ingredient transparency — characterizes a certain school of modern Portuguese canning.

Mackerel, the quintessential oily fish of the cold Atlantic waters, is at the heart of Cardume's craft. The house prioritizes responsible catches and transformation methods that preserve the fish's nutritional integrity. This approach reflects a relationship with the raw material less focused on spectacle than on honesty: doing well with little, respecting both the fish and the one who will eat it.

What made this product singular

These fillets distinguished themselves first through their minimalist composition: 70% mackerel, 29% organic olive oil, 1% salt. No aromatic tricks, no chemical preservatives. In a canned goods market where flavor accumulation is often the norm, this restraint was almost radical. North Atlantic mackerel naturally carries iodized notes, slightly metallic, which most sauces seek to mask. Here, the organic oil — delicate, Mediterranean — acted gently, without smothering, creating a subtle taste contrast: the salt and iodine of the fish dialogued with the fruity roundness of the olive.

The texture of the fillets also carried weight. Well preserved during processing, they did not fall apart when the tin was opened, remaining firm to the bite. This was canned mackerel for those who still liked to feel the fish's structure, its muscular integrity. How we served it

Why it left our Cellar

Stock rotation, the natural rhythm of the itinerant cellar. Cardume remains a fine house, but its stocks were depleted during the seasonal cycle. We archive it here not out of lack of esteem, but because supply could not be renewed within the timeframe of our current sourcing. Discovery sometimes calls for the departure of what we loved.
