What Is Iberian Charcuterie?
Iberian charcuterie is a distinct category in the world of Spanish gastronomy. It refers exclusively to products made from Iberian pigs (Sus scrofa domesticus ibericus), an ancient breed native to the Iberian Peninsula. What sets this charcuterie apart is above all the animals' diet and rearing conditions.
The Bellota label (meaning "acorn" in Spanish) is the most prestigious designation. It guarantees that the animals spent the montanera period — from late October to March — in the dehesas, the cork oak and holm oak forests typical of Extremadura and Andalusia. During this time, they feed almost exclusively on acorns, which gives the meat its incomparable hazelnut and olive aromas.
Spanish regulations distinguish four categories:
- Bellota 100% ibérico: purebred, acorn-fed, free-range — the absolute pinnacle
- Bellota ibérico: Iberian crossbreed (50% or 75%), acorn-fed
- Cebo de campo: Iberian, partially pasture-raised
- Cebo: Iberian, intensively farmed
