Green olives stuffed with chorizo paste – Plaza del Sol (280 g) | Origenes.shop

The story of this house

Plaza del Sol is a Spanish house rooted in the tradition of artisanal preserveries in southern Spain. The region, historically devoted to olive growing and Iberian charcuterie, has nurtured for generations a mastery of olive transformation — not through the passivity of simple preservation, but through the boldness of combining fruits picked at their peak firmness with elaborated fillings.

Plaza del Sol embodies this philosophy: recipes designed around sharing and aperitif moments, where each ingredient plays its part. The chorizo, here reduced to a fine paste and measured with restraint, does not overwhelm the olive — it enhances it. This is the spirit of the producer: mastery of frank flavors, respect for raw materials, a goal of conviviality.

What made this product singular

These stuffed olives embodied a delicate alchemy. The green olive — Manzanilla or similar variety — offered its firm texture, slightly crispy to the bite, while its flesh remains soft, almost neutral, ready to welcome a complementary flavor. The chorizo paste was not a simple filling: it was a fine powder, lightly smoked, with that note of pimentón — this Spanish paprika with warm nuances — that gives chorizo its gustatory signature.

The calibration was crucial. Too much filling would have stifled the balance; too little would have made it an unremarkable product. Plaza del Sol had found the balance point: a meaty bite, carried by spice without aggression, where each component remained audible. This restraint, paradoxically, is what made the product powerful.

How we served it

Most directly: as an aperitif, straight from the jar, with a glass of dry white wine or a blonde beer. The acidity of the wine contrasts with the smoked intensity of the chorizo; the beer, sparkling and neutral, pairs without conflict with the spiced flavor.

On a tapas platter: scattered among a few anchovies, sheep's cheese, dried tomatoes. The olives stuffed with chorizo played the role of spiced connector, the one that structures the aperitif and invites you to prolong the moment.

Integrated into a charcuterie-cheese platter: the stuffed olives naturally complemented whole jamón and chorizo; they offered a tender and prepared variation of the same flavor universe.

Or simply as finger food for olive enthusiasts: a small bowl alongside a carafe of fino or dry muscat, at the moment of confidences between friends.

Why it left our Cellier

It's the natural rotation of Le Cellier. Plaza del Sol regularly proposes new balances to us, other fillings, other formats. We made room for other discoveries while keeping the producer in our selection. The product did not disappear by default; it stepped aside to let others breathe.
