House : Carmencita — Novelda (Alicante) · since 1923

Origin

Carmencita is a Spanish house founded in 1923 in Novelda (Alicante) by Jesús Navarro Jover and Carmen Valero, specialising in the production of spices and colourings. The first Spanish company to pack spices in glass jars, it carries on the traditional methods of selection and packaging. This paella colouring is the result of decades of expertise in preparing the essential ingredients of Iberian cuisine.

Features

  • Specialised food colouring for rice and paella
  • Practical format: 65 g glass jar
  • Gluten-free, no superfluous additives
  • Made in Spain, guaranteed artisanal mastery
  • Optimal storage in airtight glass
  • Dosage: 1 teaspoon (1.4 g) for 4 servings

Tasting notes

This colouring gives rice a rich, even golden hue, the visual signature of traditional paella. Unlike synthetic colourings, it scrupulously respects the aromatic profile of the ingredients, without imposing any off-flavour. The chromatic intensity remains natural and elegant, faithful to Spanish culinary standards.

How to use it

  • Classic paella: pour the recommended dose into the hot stock before adding the rice, for an even diffusion of colour
  • Fragrant white rice: add to the stock or cooking water to enhance side dishes
  • Soups and stews: use half a teaspoon to enrich traditional soups
  • Mediterranean risottos: dissolve lightly in the stock for a subtle golden hue

Why we chose it

We selected Carmencita colouring for its artisanal integrity and its lack of any compromise on taste. In Switzerland, where access to authentic Spanish ingredients remains limited, this product guarantees the authenticity of traditional recipes. It is a choice for those who reject industrial mediocrity in favour of true Iberian cuisine.

The saffron of Novelda, since 1923.

Carmencita was born in Novelda (Alicante) in 1923, founded by Jesús Navarro Jover and his wife Carmen Valero. In early-20th-century Novelda, spices were traded — above all saffron, which arrived from La Mancha to be exported to Asia and Africa.
