Tartana's creamiest rice. Marisma is a variety that originated in the Ebro Delta, with a large, very pearly grain. Low in amylose, it soaks up the flavours of the stock very well – which is what gives meloso rice its creaminess.

What for: meloso (creamy) rice, caldoso (brothy) rice and risotto; it also works for paella. It cooks quickly, so keep an eye on it towards the end.

Tartana is the «els Gorets» family, rice farmers in the Albufera Natural Park near Valencia since the late 19th century. 1 kg cloth bag.

Why we chose it: alongside our paella rice, we wanted a grain made for creamy dishes. Marisma is a variety that originated in the Ebro Delta: a large, pearly grain, low in amylose, that soaks up stock and gives meloso and caldoso rice and risotto their creaminess. It comes from Tartana, the “els Gorets” family, rice farmers in the Albufera.
