Origin

Miel de León is a family house based in Pobladura de Fontecha, in the province of León (Castile and León), with its own hives spread across the forests and hills of the province and the Bierzo area. The forest honey (miel de bosque) is harvested by hand from the wild flora of these woods – bramble (blackberry), chestnut, heather and oak. Far rarer than classic flower honey, it carries the wild character of the forest within it.

Tasting notes

Dark amber colour, almost caramel. On the nose: dry wood, malt, light resin, mineral depth. On the palate: dense, barely sweet, long persistence. Notes of ripe linden, liquorice, a noble bitterness that balances the sweetness. It is a gourmet's honey – not the mild, smooth standard breakfast honey, but a honey with character, to be served as you would serve an aged cheese.

How to use it

  • On a blue cheese – Asturian cabrales, roquefort, fourme d'Ambert. The classic pairing.
  • With aged cheeses such as Manchego curado or 36-month Comté
  • In a full-fat Greek yoghurt, with nothing added – let the honey speak
  • On sourdough bread with salted butter – the purist version of the afternoon snack
  • As a glaze on grilled white meats: pork, duck, chicken with 40 cloves of garlic
